Aji Criollo Colombiano

The Aji criollo is one of the tastiest recipes that can be found in the cuisine of Colombia. In reality, it is a sauce rich and that is often served as an accompaniment to the roast but also we can use it as one of the ingrendientes its also traditional empanadas.

It is a sauce to be very gravy taste a little strong but very tasty and only need a few ingredients like the chili pepper, the tomato and the onion to produce it in just a few minutes. It is without doubt a dish of the most simple.


  • 2 green tomatoes, chopped
  • 3 stalks of onion long, chopped
  • 1 chilli pepper, chopped
  • 1 avocado
  • Salt and ground pepper
  • 1/2 cup of chopped cilantro
  • 1/2 cup of water
  • 1/2 cup of lemon or vinegar (according to taste)



First chop the tomato and the onion very small and cut into squares, put everything together, adding the avocado diced, cilantro finely chopped,the dry chili powder better or the liquid natural, lemon, oil and salt to taste.

One time we had everything, we began to remove it without stopping and so little by little all go, dissolving until we are left with a sauce that is compact and with texture similar to the avocado sauce.
