Rice with chicken, cuban

The rice is, without a doubt, one of the essential ingredients, and recurring in the cuban cuisine. Sure that the “rice to the cuban” is a dish that you've prepared it many times but the truth is that in this wonderful country also emphasizes its delicious Rice with Chicken whose recipe we explain below.

Ingredients:

  • Pieces of chicken
  • 3 cloves of garlic
  • The juice of one lime
  • 1/2 cup of oil
  • 1 chili pepper large
  • 1 large onion
  • 1 can tomato sauce
  • 1 jar of pimentos
  • 1 can of petit pois
  • 1 can of asparagus
  • 2 tablespoons of salt
  • 1/2 teaspoon pepper
  • 1 leaf of laurel
  • 2 cups of wine
  • 3 ½ cups of broth
  • 4 cups of rice
  • Saffron
  • 1/4 teaspoon ground cumin

Preparation:

Hours before you begin to prepare our recipe of rice with chicken, cuban, we need to marinate the chicken pieces with crushed garlic and the juice of lime. Make a broth with the giblets of chicken. Remove the chicken from the marinade and lay them to drain on a plate with a piece of paper.

Heat the oil and cook the chicken, add the onions well chopped, the chili pepper finely chopped, the tomato sauce, pimentos with their liquid, the liquid of the petit pois and the asparagus, the salt, the pepper, the leaf of the laurel, the saffron, the dry wine, the broth and the water.

When the chicken is almost cooked, add the rice. Leave to simmer until cook and add the petit pois and asparagus spears for garnish.

You can accompany with small slices of ripe banana.
